Aldina's 2012 Cabernet Sauvignon releases aromas full of currants, dark cherry and ripe plum. The flavors of this wine are soft, luscious tannins with nuances of dark chocolate, dried herbs and hits of spice that connect with the vineyard soil. The finish of this youthful wine is a velvety, juicy finish with toasty hints from the new French Oak.
Our 2012 vintage features 100% Cabernet Sauvignon grapes that were hand harvested on an early, cool morning when the grapes were at their optimal maturity, then brought to the cellar where the fruit was sorted and de-stemmed. The juice was then placed into open-top containers following a cold soak of five days. Once fermentation occurred, the wine was monitored carefully with gentle punchdowns three times per day until fermentation was complete. Following the fermentation, the wine was then pressed and racked into 90% New French Oak, 10% French Oak barrels where it aged for 36 months.
