Production Notes
2021 Cabernet Sauvignon grapes were picked mid October. The fruit was harvested at maturity, brought to the cellar where the fruit was hand sorted and destemmed. Pumped into Open-top fermenter with a cold soak of 5 days, during peak fermentation punchdowns 3 x a day until fermentation was complete. This wine was racked into 60 % New French oak barrels and 40% French oak barrels where it aged for 30 months. It’s a small production with 340 cases total.
