This wine showcases the concentrated aromas of dark fruit, plums and mulling spices. The flavors of this wine are of cola, rhubarb, and toasted vanilla that give a nice density to the palate. The tannins make this young wine approachable, but yet elegant.
The Aldina Vineyards 2013 grapes were harvested at maturity and brought to the cellar where the fruit was hand sorted and destemmed. The juice was placed into open-top fermenters with a cold soak of six days. Once fermentation occurred, the wine was monitored carefully, with gentle punchdowns three times a day until the fermentation was complete. Following fermentation the wine was pressed and racked into 85% New French Oak and 15% French Oak barrels where it aged for 36 months.

The 2013 Aldina Cabernet Sauvignon, with its layers and complexity, is enjoyable with wide variety of meals. We particularly love it paired with rich, flavorful recipes such as prime rib or beef stew.
